From December 22, 2017, to January 27, 2018, The St. Regis Bangkok presents 2-Michelin-Star Dutch chef Edwin Vinke from his award-winning restaurant “De Kromme Watergang,” in the village of Slijkplaat, located in the Southwest of The Netherlands.
This is the first time that chef Edwin shares his culinary expertise and perspective with diners in Bangkok. For him, cooking is all about “pleasure, passion, and perfection,” he says.
The hallmarks of chef Edwin’s cuisine are based on earthy flavors of his restaurant’s surrounds, inspired by the landscape of the Zeeland region, and its cold salty waters.
Back in The Netherlands, he and his team search for fresh, sustainable products—where available—with the shortest possible journey from producers and suppliers to his kitchen. Sea life and salt for cooking come from nearby waters, and many vegetables, fruits, and herbs come from their garden.
For guests at Jojo, chef Edwin will present two menus for lunch and dinner, in six and eight courses, respectively, with an optional sommelier’s wine pairing for each.
- Mojito ginger shot and spicy oyster coupled with linseed and tapioca crisps, and a pickle dip
- Seabass and razor clams with a Mexican estragon, almond, basil, and tomato
- Poultry with smokey carrot, cuttlefish, pork, sole, and duck liver with Jerusalem artichokes
In the 8-course menu, guests can sample North Sea crab and scallops served with avocado, pistachio, apple, and huacatay, as well as turbot and sea snails, with potato, sea vegetables, seaweed, and verbena.
Goat’s cheese is served with honey, thyme, beetroot, apple, and pecans, before the “Dame Blanche” makes a dessert cameo appearance, to end on a sweet-and-salty smooth note, with a hint of rum.
